THE CURATED SELECTION

The Founder's Collection case, sealed in brass and wax

The Founder's Collection

Every course below, in one case — the whole ten-course menu, laid in the order the seasons produced it. Serve it across an evening, or open one course a week and let the year run backwards.

Every item is marked Pantry or Cold Cellar. Pantry items are intended for ambient storage; Cold Cellar items ship chilled and must be refrigerated. Follow the instructions printed on the label of the item you receive.

The Preservation Society takes these first
Smoked Wild Salmon — batch TBCBATCHTBCPRE-LAUNCHCold Cellar

Cold, on rye toast with cultured butter and a spoon of crème fraîche.
