Elena spent eleven years on restaurant lines before she stopped cooking for the night and started cooking for the year.
She trained in Lyon, then in a cellar in Navarra where the only clock was the turning of jars. What she learned there was not a technique but a posture: that salt, smoke, fat and time are not ways of saving food from ruin — they are ways of making food that could not otherwise exist.
Aeternus began in a rented kitchen with ninety jars of apricots and a wax stamp cut by hand. The first case went out numbered 001 to a friend who had argued, loudly and often, that preserved food could never be fine dining. He has since bought eleven.
Every product in the Founder's Collection is one Elena still makes herself at least once a season, standing at the same copper pan, checking the set on a cold plate the way she was taught.

All ten preserves in a numbered ash case, sealed in brass and wax, with a hand-signed ledger card. Below is every jar in the case — its stamp, its provenance and the way it is actually made.

Smoked Wild Salmon
Cold-smoked over alder for eleven hours, cured with sea salt and juniper.

The Recipe
- 01Sides are buried in coarse sea salt, raw sugar, crushed juniper and lemon zest for thirty-six hours.
- 02Rinsed, then air-dried overnight until a pellicle forms and the surface turns matte.
- 03Cold-smoked at 24°C over alder for eleven hours, rotated on the hour.
- 04Rested four days before slicing so the smoke settles into the fat.
AT THE TABLE · Room temperature, sliced on the bias, with rye and cultured butter.
