Our mission

To make preserved food that deserves the same table as the fresh food it outlives.

Aeternus exists because two categories were allowed to drift apart. On one side, food treated with reverence and priced accordingly. On the other, food bought out of caution and eaten without pleasure. Preservation was filed under the second, which is strange, because preservation is what created most of the first.

We put the craft back in the middle of the plate. Salt, smoke, fat, acid and time are not rescue measures — they are the oldest culinary techniques there are, and in the right hands they make things that fresh cooking simply cannot.

Everything we ship is made in a small atelier, in runs we can count, by people whose names are on the ledger card in the case. Read our philosophy for the longer argument, or meet the founder.

What we hold ourselves to

Four standards

Counted, never continuous

Nothing is made on a line. Every release is a numbered batch with a start and an end, and when it is gone we do not quietly make more.

Traceable to the row

Each jar carries a batch stamp that returns the farm, the harvest date, the chef who ran the pan and the wine we would pour beside it.

Time as an ingredient

Forty-eight hours of braise. Six months under oil. Three hours of applewood. Time is not a delay in our kitchen; it is the recipe.

Nothing to hide behind

No gums, no dyes, no flavor systems. If a jar needs a stabiliser to be good, it was never good.
